In the past few weeks I have been diving head first into the work of Anthony William, the Medical Medium. I’ve been experimenting with pure celery juice every morning and eating a more plant-based version of a paleo diet. I am already seeing noticeable improvements in my digestion and energy! It’s wild! Following his recommendations of saving small amounts of fats for later in the day, I started experimenting with this Almond Butter Green Smoothie recipe for my post-swim dinners.
This Almond Butter Green Smoothie is a recipe that I’ve been working on for a few months after being inspired by an almond butter smoothie bowl that I’ve had many times. I used to feel like it was such an indulgent treat given how sweet it is from the dates and the bananas. After learning so much from the Medical Medium book, I now enjoy these fruits freely and without fear! Honestly, I think this smoothie is decadent enough to be a dessert.
If my body continues to heal and improve while following this more plant-based approach, you can expect to see more plant-based paleo recipes here in the future!
Almond Butter Green Smoothie
(Paleo, Whole30, Dairy-Free, Egg-Free, Gluten-Free)
- Strip the kale leaves from the stems and add to your blender or blender cup, discard the stems. You can substitute 1 cup packed leafy greens of choice.
- Add the frozen banana, 2 dates (take the pits out!), cinnamon, and almond butter to the blender
- Add the almond milk, adjust the amount to reach your desired creaminess
- Blend until smooth and creamy
- Pour into a bowl or mason jar and top with the hemp seeds and the sliced banana
- Eat with a spoon to savor and digest every bit!
